A Grateful Mothers Day 

  I have to say today I was spoiled by my amazing family and I am so full of gratitude for these girls, this man, this life, the women in it, and the path behind me 😍 it got me thinking about all that I have been through that has prepared me for being a mom and quite honestly I don’t think I could share all the ways I have been grown into this role. Let me tell you a few that I struggled with, and maybe you have pieces in your past that caused pain or worry or even complete sadness that have prepared you too.  

My preparation started young, before I was even in this world.
   First I was blessed with a strong, loving mother, THEN He made me a big sister 😍 Then He forever changed me when we moved in with my grandma and I got learn from her and my mom every day ❤️ Then so many amazing and hard things followed as I grew from child to mother.

  All the while, every moment, every struggle, every lesson from these incredible selfless women, was preparing me for the woman and mom I was meant to be ❤ I never understood ANY of it, I never saw it coming, and maybe you didn’t either? 

  Then something happened: God took my heart right out of my body and put it right in these two incredible girls I get to call mine 👭 He made me their mommy 🙌🏼🙌🏼 He was working it all together for my good, He really really was ❤ 

  These amazing girls were the reason for all of it! For being raised by the strong and selfless women who taught me everything I know about being the mom I am today. Watching my mom and grandma as best friends made me want that with my own mom and I am so thankful I have it 👭

  For my mom, choosing her children and their future and success at every turn, leaving the man she loved but was no good for her, only to protect and love us. Because of her strength I have zero doubts doing what is best for my girls (even when they don’t agree😉), it is second nature, it is inate and I have the very best example over and over again to draw from ❤

  For the role of big sister, mediator, advice giver, blame taker, rule breaker and even sometimes bully 😬, it prepared me for everything I go through every day raising a big sister 😉 and a little sister, and allowed me to understand their relationship on a level I never could have without my beautiful baby sisters ❤️

  For the moments I missed having a dad around, it prepared me to choose the right man to be their daddy, a good and strong man who would ALWAYS be there for them, In All the moments they want him there for and even in the ones they don’t 😉

  For the illness of my grandma, who was my second parent, my best friend and an incredible woman, it taught me compassion and empathy and patience and as a mother I use those EVERY day ❤️

  And even for my angel babies up there looking down and living in my heart, He was preparing my body, my marriage and my heart for these girls, for this scary and sometimes treacherous ride of motherhood and even in that grief I am thankful. 

  He continues to surround me with the strongest and most incredible women and I am thankful for each of them ❤️

  But these girls, Kayden Elizabeth and Tenley Florence, they were written on my heart before I ever knew they were coming, it is incredibly obvious to me NOW, that THEY were the reason for it all, they are His plan, they are the freakin best 😍 They are the perfect mix of sweet and sassy, loving, giving, grateful, hilarious, intelligent, compassionate girls and they are my best friends❤ I mean, I literally miss them when they are sleeping and feel what they are feeling and hurt when they are hurting…I mean every word when I call them my heart, because Even though my physical heart is still inside my body, my “heart” for the world, for others, and the center of all my emotions is completely in their hands and dependent on their day and their mood. There is nothing that could be better than being their mommy and I am so thankful God chose me for the job all those years ago!

Best Green Juice Recipe! 

  Fruits and veggies are so important for a balanced diet. They help maintain our gut health, fight disease, nourish our body and flush our systems! 

  This green juice recipe is perfect for Boosting Metabolism, Immune Health, a Digestive Aid and more! And when used properly with a healthy diet it will increase weight loss by eliminating toxins! 

  Whether you are an avid juicer or you are more like me and have never really loved juicing I guarantee you will LOVE this recipe!

  Now I recommend you juice at least once daily in combination with a healthy diet to see maximum effects of the juice. I am not an advocate of complete juice cleanses or liquid diets but rather daily nutrition in a balanced and properly portioned diet.

  If you do choose to juice for an entire day and use this juice as a cleanse it is a perfect mix to make 3 times daily, however do not maintain and entirely liquid diet for longer than 3 days or it can do potential harm to your body instead of good. 

Here is my favorite juice recipe!

Ingredients

  • Apples – 1.5 medium (3″ dia) 364g
  • Cucumber – 1/2 cucumber (8-1/4″) 301g
  • Ginger Root – 1 thumb (1″ dia) 24g
  • Kale – 6 leaf (8-12″) 210g (2 big handfuls of chopped)
  • Lemon – 1/2 fruit (2-3/8″ dia) 42g

I recommend Granny Smith apples but you can use whatever you have on hand 🙂 Many people enjoy adding 4 celery stalks as well but I prefer to leave it out 🙂

Healthy Breakfast On The Go!

Do you ever wake up late or take too long getting ready that you have to rush out the door?!? Me too.

Those are the mornings you are tempted to stop at Starbucks or a coffee shop or Micky D’s for a delish breakfast sandwich on the go OR grab one of those donuts floating around the office 🙈 And what’s the harm, it’s only one meal right?

WRONG!

Your first meal of the day sets your tone for the entire day and even the rest of your week! Not to mention all the science behind boosting your metabolism from the beginning of your day. If you allow yourself to give in to an unhealthy choice or temptation first thing, mentally you’ve already conceded your health for the day and put it on the back burner…you will be more likely to make “less than perfect” choices the rest of the day! 

THE GOOD NEWS: 

You can fix this issue, simply!

Here is my go to recipe for a quick breakfast scramble that can be prepped in advance AND made into breakfast burritos, bowls or eaten totally on its own!

Ingredients:

  • 18 eggs
  • 1 package sweet potato hashbrowns (frozen is fine) or chop up your own(works great with regular potatoes too as pictured)
  • 10 diced mushrooms
  • 3 diced green peppers, or any you prefer
  • 1  diced large onion
  • Veggies of your choice!
  • Turkey breakfast sausage
  • Turkey bacon
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tbsp olive or coconut oil
  • Pink Himalayan salt to taste
  • Pepper to taste
  • *optional whole wheat tortillas
  •   *shredded cheese

Directions:

  • Brown the sausage in a large skillet
  • Add bacon by dicing with scissors
  • Cook through 
  • Remove meats from pan and place on plate or bowl nearby
  • With grease left in pan, add 2 tbsps olive or coconut oil
  • Add sweet potatoes and cook 3 minutes on each side
  • Remove from pan and set aside
  • Crack all eggs into pan and scramble with whisk
  • Add all seasonings 
  • Add veggies
  • Cook on low until eggs are scrambled well
  • Add meat back in and stir well
  • Add sweet potatoes in and stir well
  • Remove from heat and store in an air tight container in the fridge for up to 5 days.*
  • Scoop 1 cup servings in microwave safe bowl and cover with a damp paper towel and heat for 2 minutes to serve

* my favorite option is to make burritos 

  • Scoop by 1 cup servings into the center of whole wheat tortillas and top with a dash of shredded cheese
  • Roll tight
  • Wrap with Saran Wrap 
  • Place 3-4 burritos to a bag in freezer safe large ziplock bags and place in freezer(keeps 1 month) or fridge(keeps 1 week)
  • To cook  unwrap and wrap in paper towel 
  • From fridge microwave 1 minute
  • From freezer microwave 3 minutes

Fix Approved! 1💚1❤️1/2💙1💛

Best Veggie and Chicken Stir Fry – Sodium Free!

Tonight for dinner: Veggie and Chicken Stir Fry with soba noodles!
Recipe: great with or without the noodles, and delicious served with brown rice
Spice mix:

2 tbsp ground ginger

2 tbsp garlic powder

2 tbsp onion powder

2 tsp red pepper flakes

*mix together in a bowl and set aside*
– Add about 2tbsp coconut oil to your wok and heat on high, add: 1/2 Spice mix
– add 3 thawed and sliced chicken breasts
– cook on high until cooked through
-remove chicken from wok and set aside
– add 1 more tbsp of coconut oil to the wok and heat
– add your sliced veggies of choice

I use: Sliced mini sweet peppers, a sliced onion and tomatoes – other great options I have tried are zucchini, broccoli, snap peas, carrots and celery
– add 2 tbsp minced garlic
– Cook on high 3-4 minutes
– add noodles (optional)
– cook 3 more minutes
– add the other half of the seasoning and the chicken back into the wok and cook for about 1-2 more minutes on high
Serve while hot and enjoy!
ADDITIONAL NOTE to those following the Fix Portion Plan like me:

Soba Noodles are made out of buckwheat, which is an approved Fix portion food BUT these are not technically on the list of approved foods, I choose to use them anyway rarely and portion is key! I load up my plate with veggies and chicken first and then add about 1/2 yellow container to my meal and count it as a full yellow just to be safe 🙂

The choice is of course personal where to moderate items like this and what works for your family, I do not recommend using items that are not made from ingredients on the approved list at any time 🙂

Strawberry Spinach Delight

Do you get late night snack cravings?  Need a little something sweet? 

One of my most FAVORITE creations and so simple to throw together for lunch, dinner or a late night snack! 

Ingredients:

Organic Spinach

2-3 strawberries

Small chunks Peppercorn Feta

A few pistachios (about 8)

Balsamic Vinegar* and 

Salt and pepper 

– Toss together and enjoy! 
*For a really yummy sweet kick I use Elderberry Balasamic Vinegar, yummy!

When I sat down at my computer at 9 am this morning to register for the trip that I was so excited to qualify for, there were probably 1000’s of others doing the same thing…because the moment I hit the “REGISTER NOW” link, I got a SOLD OUT message!

I cried.

A lot.

Then refreshed the page.

Then cried more.

Then repeated that cycle of denial for about 45 minutes!

THEN…I got on my knees (while hitting the refresh button of course;) ) and I gave it to God…all of it. I had a deep feeling in my heart that I was meant to be on this trip.  I KNOW in my being that I am where God wants me…So my prayer looked something like this “Dear Lord, please just take this, take this business, take this trip, take this money, take all of it and do with it what your will is!  Please if I am meant to change these lives and be on this trip PLEASE let the registration open!  If I am not LORD I still know I am in my purpose, I am walking in faith alone in you, I am giving in my time of lack and trusting you to move!  Lord show me what you have for me!…”

Then … I KID YOU NOT!

My screen freakin’ glitched and the message “Congratulations!  Please complete your Registration for the 2017 Success Club Trip!”

Then I cried a little more and said a prayer of thanks!

Today I logged into a website, where, for the first time in my entire life, I booked a trip for my husband and I to a tropical location and an all expense paid trip by Beachbody!  We will have been married 10 years in 2017, we have two incredible kiddos, we have debt, and a mortgage and have never been able to afford to put ourselves first…until now!

I am in shock that right now I am earning a trip with my husband to one of the most incredible places on earth, by taking care of myself and taking care of my family.  THAT. IS. IT.

SERIOUSLY.

I decided to put my health first and by doing that, I now am experiencing the freedom that I used to think was never possible.  I used to think there was a catch…there is NO CATCH…there is only a commitment.  And not the kind you make on a contract or financially, but to YOURSELF.  To work hard and love yourself every day, more than you did the day before, to put yourself first and take care of your body, mind and spirit, to focus on changing yourself and in turn YOU WILL CHANGE YOUR WORLD WHILE CHANGING THE WORLD!

It really is that simple.  I am an ordinary girl, with an ordinary life, that is becoming more extraordinary by the day.  Are you ready to see what the heck this is all about?  Are you ready to put your health first?  Your family first?  Your goals first?  Are you ready to start living your life…because honestly, 2 months ago…I wouldn’t have been writing this, I wouldn’t have been thinking this, and I sure as hell wouldn’t have been telling people about my FREE trip to Punta Cana!  So let me show you what I am doing, and help you change your life, so you can change others!
